- 1 butternut squash, peeled and cubed

- 3 cups vegetable stock
- 1/2 cup cream
- 2 tbsp bourbon
- Salt and black pepper
- 1/4 tsp nutmeg
Instructions
- Roast squash at 400°F until tender.
- Sauté onion in olive oil until soft.
- Add squash and stock, simmer 10 minutes.
- Blend until smooth, stir in cream and bourbon.
- Season and serve warm.
