Ingredients

  • 1 butternut squash, peeled and cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cups vegetable stock
  • 1/2 cup cream
  • 2 tbsp bourbon
  • Salt and black pepper
  • 1/4 tsp nutmeg

Instructions

  1. Roast squash at 400°F until tender.
  2. Sauté onion in olive oil until soft.
  3. Add squash and stock, simmer 10 minutes.
  4. Blend until smooth, stir in cream and bourbon.
  5. Season and serve warm.
