  • 4 sea bass fillets (6 oz each)
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh dill, finely chopped
  • 1/4 cup fresh chives, finely chopped
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1/2 cup dry white wine
  • 2 tbsp bourbon
  • 1/4 cup fresh lemon juice
  • 1/2 cup unsalted butter, cold and cut into pieces

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat sea bass fillets dry and season with salt and pepper.
  3. Spread flour on a plate and coat the top side of each fillet lightly.
  4. Mix parsley, dill, and chives in a shallow bowl.
  5. Press the floured side of each fillet into the herb mixture to form an even crust.
  6. Heat olive oil in an ovenproof skillet over medium-high heat.
  7. Place fillets herb-side down and sear for 2-3 minutes until golden.
  8. Flip fillets and transfer skillet to the oven; bake for 8-10 minutes until fish is opaque and flakes easily.
  9. Meanwhile, prepare the bourbon citrus beurre blanc sauce by simmering white wine, bourbon, and lemon juice in a saucepan until reduced by half.
  10. Whisk in cold butter pieces gradually over low heat until sauce is smooth and creamy; keep warm.
  11. Plate each fillet and spoon bourbon citrus beurre blanc sauce over the top.
  12. Garnish with additional fresh herbs if desired and serve immediately.
