The Recipe

Ingredients & Instructions

Everything you need to make this dish at home.

Ingredients

  • 8 lamb chops (about 1 inch thick)
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 bunch asparagus, trimmed
  • 12 baby carrots, peeled
  • 2 tablespoons unsalted butter
  • 3 tablespoons bourbon
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard

Instructions

  1. In a small bowl, combine rosemary, thyme, garlic, salt, and pepper. Rub the mixture evenly onto both sides of the lamb chops.
  2. Heat olive oil in a large skillet over medium-high heat. Add lamb chops and sear for 3-4 minutes per side until browned and cooked to desired doneness. Remove from heat and let rest.
  3. In a separate pan, melt butter over medium heat. Add asparagus and baby carrots, sauté for 5 minutes until crisp-tender.
  4. In a small bowl, whisk together bourbon, honey, and Dijon mustard.
  5. Pour bourbon glaze over the vegetables and cook for an additional 3–4 minutes, stirring frequently until vegetables are glazed and slightly caramelized.
  6. Serve lamb chops topped with glazed spring vegetables on the side. Drizzle any remaining bourbon glaze over the lamb for added flavor.
