  • 1/3 cup bourbon
  • 1/4 cup pure maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 2 apples, cored and sliced
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh sage leaves, chopped
  • Fresh thyme sprigs for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Pat pork tenderloin dry and season generously with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear pork on all sides until browned, about 3-4 minutes per side.
  3. In a small bowl, whisk together bourbon, maple syrup, minced garlic, and Dijon mustard.
  4. Pour half of the bourbon maple glaze over the pork, reserving the rest.
  5. Transfer skillet to oven and roast pork for about 20-25 minutes or until internal temperature reaches 145°F (63°C). Remove from oven and tent with foil.
  6. While pork rests, melt butter in a separate pan over medium heat. Add apple slices and sauté until tender and lightly caramelized, about 5 minutes.
  7. Stir in fresh sage and remaining bourbon maple glaze; cook for another 2 minutes until sauce thickens slightly.
  8. Slice pork tenderloin and serve topped with glazed apples and fresh thyme sprigs.
