  • 1.5 lb pork tenderloin
  • 1/3 cup bourbon
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon fresh thyme leaves
  • 2 cups diced carrots
  • 2 cups diced parsnips
  • 1 large sweet potato, cubed
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together bourbon, maple syrup, Dijon mustard, smoked paprika, cinnamon, and thyme.
  3. Season the pork tenderloin with salt and pepper. Place in the center of the prepared baking sheet.
  4. Toss the carrots, parsnips, and sweet potato in olive oil, salt, and pepper, then spread around the pork on the baking sheet.
  5. Brush half the bourbon-maple glaze over the pork.
  6. Roast in the oven for 25 minutes, then brush with remaining glaze and toss the vegetables.
  7. Continue roasting for another 15 minutes or until the pork reaches an internal temperature of 145°F (63°C) and vegetables are tender.
  8. Let pork rest for 5 minutes before slicing. Serve pork slices with the roasted root vegetables.
