  • 4 trout fillets
  • Salt and black pepper to taste
  • 1/4 cup flour for dusting
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1/4 cup sliced almonds
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley

Instructions

  1. Pat trout fillets dry, season with salt and pepper, and dust lightly with flour.
  2. Heat olive oil in a skillet and cook trout skin-side down first until crisp, then flip and finish cooking.
  3. Remove the trout and keep warm.
  4. In the same pan, melt butter and cook sliced almonds until golden, then stir in lemon juice and parsley.
  5. Spoon almond butter over the trout and serve immediately.
