  • 1 baked tart shell
  • 2 cups milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • 2 cups mixed fresh fruit
  • 2 tbsp apricot jam
  • 1 tbsp water

Instructions

  1. Heat the milk in a saucepan until just warm.
  2. Whisk egg yolks, sugar, and cornstarch together, then slowly add the warm milk.
  3. Return to the saucepan and cook until thickened, then stir in vanilla and butter and chill completely.
  4. Fill the tart shell with pastry cream and arrange fresh fruit on top.
  5. Warm apricot jam with water and brush over the fruit for a glossy finish.
