- 6 ripe tomatoes, chopped

- 1 red bell pepper, chopped
- 1/4 red onion, chopped
- 2 garlic cloves
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tbsp fresh herbs such as basil or parsley
- Salt and black pepper to taste
Instructions
- Combine tomatoes, cucumber, bell pepper, red onion, garlic, olive oil, vinegar, herbs, salt, and pepper in a blender.
- Blend until mostly smooth, leaving a little texture if preferred.
- Chill the soup for at least 2 hours.
- Taste and adjust seasoning before serving.
- Serve cold with extra herbs on top.
