Bourbon-Infused Parsnip and Potato Mash with Chives

Ingredients

  • 1 lb parsnips, peeled and chopped
  • 1 lb Yukon Gold potatoes, peeled and chopped
  • 2 tbsp butter
  • 2 tbsp bourbon
  • 1/4 cup milk or cream
  • 2 tbsp fresh chives, chopped
  • Salt and black pepper to taste

Instructions

  1. Boil parsnips and potatoes together until tender.
  2. Drain well and return to the pot to let excess moisture evaporate.
  3. Mash with butter, bourbon, milk or cream, salt, and pepper until smooth.
  4. Stir in most of the chives.
  5. Transfer to a serving bowl, top with remaining chives, and serve warm.
