  • 4 carrots for glazing
  • 1 tbsp honey
  • 1 tbsp butter

Instructions

  1. Brown the short ribs on all sides in a heavy pot and set aside.
  2. Cook onion, chopped carrots, and garlic, then stir in tomato paste.
  3. Add bourbon and beef stock, return ribs to the pot, cover, and braise at 325°F for about 3 hours.
  4. Cook sweet potatoes until tender and mash until smooth.
