  • 4 ounces goat cheese, softened
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon honey
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a baking sheet lined with parchment paper.
  2. Score a 1-inch border around the edge of the pastry with a knife, being careful not to cut all the way through.
  3. In a large skillet, heat butter and olive oil over medium heat. Add sliced leeks and carrots; sauté until softened, about 10 minutes.
  4. Stir in bourbon and honey, cooking until liquid reduces and vegetables are caramelized, about 5 minutes. Season with salt, pepper, and lemon zest. Remove from heat.
  5. Spread the softened goat cheese evenly inside the scored border on the pastry.

  7. Bake the tart in the preheated oven for 25-30 minutes until pastry is golden and crisp.
