Ingredients
- 1 lb parsnips, peeled and chopped
- 1 lb Yukon Gold potatoes, peeled and chopped
- 2 tbsp butter
- 2 tbsp bourbon
- 1/4 cup milk or cream
- 2 tbsp fresh chives, chopped
- Salt and black pepper to taste
Instructions
- Boil parsnips and potatoes together until tender.
- Drain well and return to the pot to let excess moisture evaporate.
- Mash with butter, bourbon, milk or cream, salt, and pepper until smooth.
- Stir in most of the chives.
- Transfer to a serving bowl, top with remaining chives, and serve warm.
