Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1/4 cup bourbon
  • 3 tbsp honey
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 4 large potatoes, peeled and cubed
  • 4 cloves roasted garlic
  • 1/4 cup milk
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together bourbon, honey, minced garlic, soy sauce, and a pinch of salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken thighs with salt and pepper.
  4. Sear chicken thighs skin-side down until golden brown, about 5 minutes. Flip and cook for another 3 minutes.
  5. Pour bourbon honey garlic sauce over the chicken and transfer the skillet to the oven.
  6. Roast for 20 minutes or until chicken is cooked through and sauce is bubbly and caramelized.
  7. Meanwhile, boil potatoes in salted water until tender, about 15 minutes.
  8. Drain potatoes and mash with roasted garlic, butter, and milk until creamy. Season with salt and pepper to taste.
  9. Serve the bourbon honey garlic chicken thighs over roasted garlic mashed potatoes, spooning extra sauce from the skillet over the top.
