  • 6 ripe tomatoes, chopped

  • 1 red bell pepper, chopped
  • 1/4 red onion, chopped
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh herbs such as basil or parsley
  • Salt and black pepper to taste

Instructions

  1. Combine tomatoes, cucumber, bell pepper, red onion, garlic, olive oil, vinegar, herbs, salt, and pepper in a blender.
  2. Blend until mostly smooth, leaving a little texture if preferred.
  3. Chill the soup for at least 2 hours.
  4. Taste and adjust seasoning before serving.
  5. Serve cold with extra herbs on top.
