Ingredients

  • 4 duck breasts
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 ripe peaches, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, deseeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a small saucepan, combine bourbon, brown sugar, soy sauce, and Dijon mustard. Simmer over medium heat until the mixture thickens to a glaze (about 8 minutes). Set aside.
  2. Score the skin of the duck breasts in a crisscross pattern and season with salt and pepper.
  3. Preheat grill to medium-high heat.
  4. Place duck breasts skin side down on the grill. Cook for 6-7 minutes until the skin is crisp and golden. Flip and cook an additional 5-6 minutes for medium rare.
  5. During the last few minutes of cooking, brush the duck breasts with the bourbon glaze several times.
  6. While the duck cooks, combine peaches, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
  7. Remove the duck from the grill and let rest for 5 minutes.
  8. Slice the duck breasts and serve topped with the fresh peach salsa and an extra drizzle of bourbon glaze if desired.
