  • 1 red bell pepper, cut into large rings
  • 1 small eggplant, sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup bourbon
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 clove garlic, minced

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small saucepan, combine bourbon, brown sugar, apple cider vinegar, smoked paprika, cayenne pepper, and minced garlic. Bring to a simmer over medium heat and cook until the mixture thickens slightly, about 8 minutes. Remove from heat and set aside.
  3. Brush zucchini, yellow squash, eggplant, and red bell pepper lightly with olive oil. Season with salt and pepper.
