  • 4 duck breasts, skin on
  • 1/3 cup bourbon
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 4 carrots, peeled and cut into chunks
  • 3 parsnips, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the carrots and parsnips with olive oil, thyme, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Score the duck breast skin in a crosshatch pattern, season with salt and pepper.
  4. Place duck breasts skin-side down in a cold skillet, then cook over medium heat until the skin is crisp, about 6-8 minutes. Flip and cook the other side for 4-5 minutes or until medium-rare.
  5. Remove the duck and keep warm.
  6. In the same skillet, reduce heat to low, add bourbon, maple syrup, Dijon mustard, and soy sauce; stir well and simmer to thicken slightly into a glaze.
  7. Slice the duck breasts and drizzle with the maple bourbon glaze.
