  • 2 tablespoons bourbon
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon freshly ground black pepper
  • 4 large eggs

Instructions

  1. In a large skillet, melt butter over medium heat. Add red onion and bell peppers, sauté until softened, about 5 minutes.
  2. Stir in the diced ham and pineapple chunks; cook for an additional 5 minutes until pineapple starts to caramelize.
  3. In a small bowl, combine maple syrup, bourbon, smoked paprika, and black pepper.
