  • 1.5 pounds pork tenderloin
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup bourbon
  • 1/4 cup pure maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon fresh thyme leaves

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the sweet potato cubes with 1 tablespoon olive oil, salt, pepper, and half of the thyme leaves. Spread evenly on the baking sheet.
  3. Roast sweet potatoes in the oven for 25-30 minutes, turning halfway, until tender and caramelized.
  4. Meanwhile, season the pork tenderloin with salt, pepper, and smoked paprika.
  5. Heat remaining 1 tablespoon olive oil in a large oven-proof skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side.
  6. In a small bowl, whisk together bourbon, maple syrup, minced garlic, and Dijon mustard.
  7. Pour the bourbon-maple glaze over the seared pork.
  8. Transfer the skillet to the oven and roast for 12-15 minutes, or until the internal temperature reaches 145°F (63°C).
  9. Remove pork from the oven and let rest for 5 minutes before slicing.
  10. Serve sliced pork tenderloin alongside roasted sweet potatoes, garnished with the remaining fresh thyme leaves.
