Maple Bourbon Spiced Apple Pancakes with Pecan Maple Syrup

Ingredients

• 2 cups all-purpose flour
• 2 tbsp brown sugar
• 1 tbsp baking powder
• 1/2 tsp salt
• 1 tsp ground cinnamon
• 1/2 tsp ground nutmeg
• 1/4 tsp ground cloves
• 1 1/2 cups milk
• 2 large eggs
• 1/4 cup bourbon
• 2 tbsp melted butter
• 1 large apple, peeled and diced
• For the Pecan Maple Syrup:
• 1 cup pure maple syrup
• 1/2 cup chopped pecans
• 1 tbsp bourbon
• Heat a non-stick skillet or griddle over medium heat and lightly grease.
• Pour 1/4 cup batter for each pancake onto the skillet; cook until bubbles form on the surface, about 2-3 minutes.
• Flip and cook an additional 2 minutes until golden and cooked through.
• Meanwhile, prepare the syrup: combine maple syrup and chopped pecans in a small saucepan and warm over low heat.
• Stir in the bourbon and keep warm.
• Serve pancakes stacked with warm pecan maple syrup drizzled generously over top.
