- 4 trout fillets
- Salt and black pepper to taste

- 3 tbsp butter
- 1/4 cup sliced almonds
- 1 tbsp lemon juice

Instructions
- Pat trout fillets dry, season with salt and pepper, and dust lightly with flour.
- Heat olive oil in a skillet and cook trout skin-side down first until crisp, then flip and finish cooking.
- Remove the trout and keep warm.
- In the same pan, melt butter and cook sliced almonds until golden, then stir in lemon juice and parsley.
