Ingredients

  • 10 cups day-old brioche bread, cubed
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups smoked Gouda, shredded
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1/4 cup fresh chives, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pure maple syrup
  • 2 tablespoons bourbon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, cream, salt, and pepper.
  3. Spread half of the bread cubes evenly in the baking dish. Top with half of the asparagus, smoked Gouda, and chives.
  4. Repeat layering with remaining bread, asparagus, Gouda, and chives.
  5. Pour the egg mixture evenly over the strata, pressing down gently to soak the bread.
  6. Cover with foil and bake for 35 minutes.
  7. Remove foil and bake an additional 10 minutes until golden brown and set.
  8. While strata bakes, combine maple syrup and bourbon in a small saucepan over low heat. Simmer gently for 5 minutes to meld flavors.
  9. Drizzle bourbon maple syrup over slices of strata before serving warm.
