The Recipe

Ingredients & Instructions

Everything you need to make this dish at home.

Ingredients

  • 1.5 lbs pork tenderloin
  • 1 cup pumpkin puree
  • 1/4 cup bourbon
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 3 cloves garlic, minced
  • 3 cups assorted autumn vegetables (carrots, parsnips, Brussels sprouts), chopped
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh thyme sprigs for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss the autumn vegetables with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  2. Meanwhile, whisk together pumpkin puree, bourbon, maple syrup, cinnamon, nutmeg, ginger, and minced garlic in a bowl to create the glaze.
  3. Season pork tenderloin generously with salt and pepper. Heat remaining 1 tbsp olive oil in a large ovenproof skillet over medium-high heat.
  4. Sear pork on all sides until browned, about 2-3 minutes per side.
  5. Brush the pumpkin bourbon glaze over the pork, reserving some for later.
  6. Transfer skillet to the oven and roast pork for about 15-18 minutes or until internal temperature reaches 145°F (63°C), brushing with additional glaze halfway through.
  7. Remove pork from oven, let rest for 5 minutes, then slice.
  8. Serve pork slices over roasted vegetables, drizzled with remaining glaze and garnished with fresh thyme sprigs.
