  • 4 sea bass fillets (6 oz each)
  • 1 bunch fresh asparagus, trimmed
  • 1/3 cup bourbon
  • 2 tablespoons honey
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together bourbon, honey, lemon zest and juice, orange zest and juice, minced garlic, and Dijon mustard to create the glaze.
  3. Place the asparagus on the baking sheet, drizzle with 1 tablespoon olive oil, season with salt and pepper, and toss to coat evenly.
  4. Roast the asparagus in the oven for about 10 minutes until tender-crisp.
  5. Meanwhile, season the sea bass fillets with salt and pepper.
  6. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat.
  7. Sear the sea bass fillets skin-side down for 3-4 minutes until crispy, then flip and cook for 2 minutes.
  8. Pour the bourbon-citrus glaze over the fillets, allow it to bubble and thicken slightly, spooning the glaze over the fish for 1-2 minutes.
  9. Plate the roasted asparagus and top with glazed sea bass fillets.
