Ingredients

  • 4 (6 oz) arctic char fillets, skin on
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh parsley, chopped
  • Zest and juice of 1 lemon
  • 2 tbsp bourbon
  • 1 tbsp honey
  • Salt and freshly ground black pepper

Instructions

  1. In a small saucepan, combine bourbon, honey, lemon juice, and zest. Simmer over medium heat until reduced by half and slightly syrupy. Set aside.
  2. Season arctic char fillets with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Place fillets skin side down and cook for 4-5 minutes until skin is crisp.
  4. Flip fillets and add butter, garlic, thyme, and parsley to the pan. Spoon melted herb butter over fish while cooking for another 3-4 minutes until cooked through.
  5. Remove fish from pan and drizzle bourbon citrus glaze over the top before serving.
  6. Garnish with additional fresh herbs and lemon wedges if desired.
