Ingredients

  • 4 arctic char fillets (6 oz each)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh chives
  • Zest of 1 lemon
  • 1/4 cup bourbon
  • 2 tablespoons orange juice
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine parsley, dill, chives, and lemon zest.
  3. Season the arctic char fillets with salt and pepper on both sides.
  4. Press the herb mixture firmly onto the top of each fillet.
  5. Place the fillets on the prepared baking sheet, skin-side down.
  6. In a small saucepan, combine bourbon, orange juice, honey, and Dijon mustard. Bring to a simmer over medium heat, reduce by half until slightly thickened, about 5 minutes.
  7. Drizzle half of the bourbon citrus glaze over the arctic char fillets.
  8. Bake the fillets for 12-15 minutes, or until the fish flakes easily with a fork.
  9. Remove from the oven and drizzle the remaining glaze over the fillets.
  10. Serve immediately with a side of spring vegetables or light salad.
