  • 4 arctic char fillets (6 oz each)
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 4 tbsp unsalted butter
  • 2 tbsp bourbon
  • Juice and zest of 1 lemon
  • 1 garlic clove, minced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the arctic char fillets dry and season with salt and pepper.
  3. In a small bowl, mix parsley, dill, chives, and olive oil to form a herb crust.
  4. Press the herb mixture evenly over the top of each fillet.
  5. Heat an oven-proof skillet over medium-high heat and sear the fillets skin-side down for 3 minutes until the skin is crisp.
  6. Flip the fillets and transfer the skillet to the oven; bake for 8-10 minutes until fish is cooked through.
  7. While the fish bakes, melt butter in a small saucepan over medium heat.
  8. Add minced garlic and sauté for 1 minute until fragrant.
  9. Stir in bourbon, lemon juice, and zest; simmer for 2-3 minutes to reduce slightly.
  10. Remove from heat and drizzle the bourbon lemon butter sauce over the cooked fillets before serving.
