  • 16 mushroom caps, stems removed
  • 1 tbsp olive oil
  • 2 cups spinach, chopped
  • 2 garlic cloves, minced
  • 1/3 cup breadcrumbs
  • 1/3 cup grated Parmesan
  • 2 tbsp cream cheese
  • Salt and black pepper to taste
  • 1 tbsp parsley, chopped

Instructions

  1. Preheat oven to 375°F.
  2. Sauté chopped mushroom stems with olive oil, spinach, and garlic until the spinach wilts.
  3. Stir in breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper.
  4. Fill mushroom caps with the mixture and arrange on a baking sheet.
  5. Bake for 20 to 25 minutes until tender and lightly browned on top.
