- 16 mushroom caps, stems removed
- 1 tbsp olive oil
- 2 cups spinach, chopped
- 2 garlic cloves, minced
- 1/3 cup breadcrumbs
- 1/3 cup grated Parmesan
- 2 tbsp cream cheese
- Salt and black pepper to taste
- 1 tbsp parsley, chopped
Instructions
- Preheat oven to 375°F.
- Sauté chopped mushroom stems with olive oil, spinach, and garlic until the spinach wilts.
- Stir in breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper.
- Fill mushroom caps with the mixture and arrange on a baking sheet.
- Bake for 20 to 25 minutes until tender and lightly browned on top.
