  • 14 oz firm tofu, pressed and cubed
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp neutral oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 cup snap peas
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp tahini or sesame paste

Instructions

  1. Toss tofu with soy sauce and sesame oil, then sear in a hot skillet until golden and set aside.
  2. Stir-fry the vegetables in neutral oil until crisp-tender.
  3. Add garlic and ginger and cook briefly until fragrant.
  4. Whisk soy sauce, honey, rice vinegar, and tahini together and pour into the pan.
  5. Return tofu to the skillet, toss to coat, and serve hot.
